8 people as a dip or 4 people as a side
It doesn’t matter which way you spell it, hommus is a dip we all love. Some like their hommus silky smooth and some like it with a little texture, whichever way you make it there must be the right balance between chickpeas, tahini, garlic, lemon and salt. the water is added to achieve the desired consistency.
Flavoured hommus is not what I grew up with and although I love trying these new variations, nothing beats the original, especially when it’s done right. I am a busy working mother and I do not have time to soak and boil chick peas and although it does taste a smidgen better, the difference is barely noticeable. To save time, I use canned chickpeas. So here, I have provided you with a simple recipe that anyone can do in literally a few minutes, provided you have some simple ingredients.
Ingredients
- 2 x 400g of Chickpea cans
- 2 cloves of garlic or be more specific, 1 level teaspoon of very finely minced garlic.
- 30 mls Lemon juice
- ¼ cup Tahini paste or 60mls
- ½ cup of water
- ½ teaspoon salt
- Extra virgin olive oil for the olive oil moat
- Sweet paprika, to garnish
Method
- Open the cans of chick peas, empty contents into a bowl and rinse under cold running water to remove the brine. Drain well and place into a food processor
- Peel and crush 2 cloves of garlic, I prefer to use a pestle and mortar but you can use a garlic crusher, measure 1 teaspoon and then add this to the food processor also
- Add tahini paste, water and salt and lemon juice to the food processor and blend on high until you can see a smooth consistency, stopping a few times to scrape down the edges. If your hommus is still a little thick in consistency add a tiny bit of water and blend through again until you have achieved your desired consistency
- Transfer your hommus to a deep serving bowl or a flat serving platter
- Using the back end of a spoon slightly flatten the top of your hommus and make a deep circular impression in the dip for the extra virgin olive oil moat
- Sprinkle a little sweet paprika to garnish if desired
