8 to 10 people as a dessert topping
If you have ever wanted to experiment with Lebanese or Middle Eastern desserts, you will need to master the art of preparing the gorgeous syrup we call Attir. This is a rosewater and orange blossom water syrup that is used in many of our desserts and you will love how easy it is to prepare. The possibilities are endless with this syrup, I even use it when serving certain beverages.
This syrup will keep in the fridge easily for a few weeks and is very handy to have in stock.
Ingredients
- 2 cups White caster sugar
- 1 cup Water
- 1 teaspoon Rosewater
- 1 teaspoon Orange Blossom Water
- 2 teaspoon Lemon Juice
Method
- It is very important that you time this precisely so that your syrup is not too runny and not too thick. Have your timer ready to go.
- Start by measuring and pouring the rosewater and orange blossom water into a small ramekin ready for use later, do the same for the lemon juice. They need to be ready on hand to add to the syrup
- Place the sugar and water in a pot and stir over medium heat until the sugar has dissolved and the syrup is bubbling over nicely
- Leave it bubbling away for 6 minutes and then add the rosewater and orange blossom and lemon juice
- Stir through well for another minute and remove from the heat and allow it to cool completely
- Pour the Attir into a lovely glass bottle and store in the fridge until ready to use
- Once the Attir has cooled it should have a very similar consistency to maple syrup, maybe, ever so slightly thicker
Some people prefer this syrup runny and others really love a thicker consistency. Again, its a matter of personal taste and you can experiment.
