This is my go to recipe when I wake up not feeling the best and need a healthy warming soup. This recipe does not require a lot of effort to prepare and is perfect for when you have to make your very own “Get well soup”.
Ordinarily my mum would also include chopped spinach, however I have decided not to use it in my version because my family don’t particularly enjoy it. If you are feeling like you wish to experiment using a handful of chopped up spinach leaves this would be an added bonus.
This soup is totally vegan and gluten free. It’s also packed with superfoods providing vitamins and minerals we all need during the colder months of the year to keep our immune system healthy and strong.
The earthy flavours of the lentils and potatoes are lifted by the garlic and onion in the broth and the mint and lemon which is added at the end finishes it beautifully.
I enjoy serving this soup with hot crusty bread and extra dry mint and lemon wedges on the side.
Ingredients
- 1 cup Green Lentils
- 400g Potato or 3 medium size
- 150g Brown Onion or 1 medium size
- 2 decent size cloves of Garlic
- 30mls Olive Oil
- 2 litres Water
- 1 teaspoon Salt
- sprinkle of ground Black Pepper
- 1 teaspoon dried Mint
- 2 Lemons cut into wedges
Method
- Peel and dice the onion and garlic
- Peel and dice the potato
- Measure 1 cup of lentils and rinse under cold water ready to use
- Heat the olive oil in a medium size stockpot over the stovetop, add the onion and garlic and cook until they have softened nicely
- Add the lentils and stir, then add the potato and stir
- Add the salt, pepper and water. Bring to the boil then reduce to simmer for 30 to 40 minutes until you can see the stock has thickened a little and the potato and lentils have become soft
- During the last 5 minutes of simmer time add the dried mint and stir through
- Serve the soup with a generous squeeze of lemon and hot crusty bread
Tips
- The simmer time I have suggested above is to achieve the consistency I enjoy. Please use my simmer time as a guide. You can simmer down the broth to achieve your desired consistency. Some of my family members love this thicker and simmer their soup down till all the ingredients are really broken down
- Feel free to add a handful of chopped spinach leaves, this also adds lovely flavour and goodness to the soup
- I do not add any vegetable stock to my soup as I like to keep the flavours completely natural, however if that is something you would like to do to add extra flavour you can
